Course Description

Developed in partnership with The Gerald J. and Dorothy R. Friedman School of Nutrition Science and Policy at Tufts and the Academy of Nutrition and Dietetics.

In today’s globally interconnected food industry, mastering the regulatory landscape of food labeling is more important than ever. This course empowers you with the knowledge and skills to interpret and comply with U.S. regulations while understanding international influences on food safety standards. Through engaging lessons and hands-on activities, you’ll explore the differences between U.S. FDA and European health claims, examine the impact of global food standards on regulations, and practice analyzing truth in advertising and consumer protection. By the end of the course, you’ll be better prepared to confidently navigate regulatory complexities, assess scientific evidence, and advocate for transparent and compliant food labeling in both your personal and professional life.

Regulations for Food Labeling is one of three related courses comprising a series of skills related to Nutrition in Industry. These courses are part of a portfolio of Nutrition related micro-credentials.

Course Learning Objectives:

  • Identify the roles and responsibilities of regulatory bodies like the FDA, FTC, and EFSA in food, dietary supplements, health claims, labeling compliance and consumer protection. 
  • Develop strategies for effectively communicating regulatory requirements, including health claims, nutrient claims, and structure/function claims.  
  • Compare and contrast U.S. and European regulatory framework, approaches, and their global implications. 
  • Evaluate international standards and their impact on safety, trade, and consumer trust. 
  • Determine the type of scientific evidence necessary to support claims and ensure that advertising is truthful and not misleading.

Completion Requirements:

This course is online and self-paced. Learners who enroll for the course ahead of the course start date will be given access to the course on the listed start date. For learners who enroll after the listed start date, access to the course will be given within 72 hours of enrollment, please lookout for an email invite to the course content. Learners will receive 8 weeks to complete the course and upon successful completion receive a digital badge.
