Course Description
Developed in partnership with The Gerald J. and Dorothy R. Friedman School of Nutrition Science and Policy at Tufts and the Academy of Nutrition and Dietetics.
The food and nutrition industry continues to evolve rapidly, presenting both unique challenges—such as regulatory compliance, consumer demand for transparency, and sustainability concerns—as well as exciting opportunities for innovation in product development, personalized nutrition, and advancing food technology. This course is designed to equip you with the tools to think critically, innovate effectively, and advocate for impactful solutions in professional settings. Through a blend of engaging lessons and practical activities, you will learn to identify key challenges, generate creative solutions, and align your ideas with both regulatory requirements and consumer expectations. By the end of the course, you’ll be better prepared to collaborate across teams, develop health-focused innovations, and drive meaningful change in the field of food and nutrition.
Cultivating An Innovator’s Mindset is one of three related courses comprising a series of skills related to Nutrition in Industry. These courses are part of a portfolio of Nutrition related micro-credentials.
Course Learning Objectives:
- Identify key challenges and opportunities in the food and nutrition industry that influence innovation.
- Recognize attributes of impactful, health-focused solutions that balance consumer needs and regulatory requirements.
- Understand basic frameworks and tools that support the development of innovative nutrition solutions.
- Assess whether a solution is feasible and aligns with industry standards and consumer expectations.
- Describe strategies for collaborating in cross-functional teams to improve nutrition-focused products, programs, or services.

Completion Requirements:
This course is online and self-paced. Learners who enroll for the course ahead of the course start date will be given access to the course on the listed start date. For learners who enroll after the listed start date, access to the course will be given within 72 hours of enrollment, please lookout for an email invite to the course content. Learners will receive 8 weeks to complete the course and upon successful completion receive a digital badge.
